Russian Osetra (Acipenser gueldenstaedtii) Caviar is sourced from the highest quality Russian Sturgeon species of average size and weighing between 20 to 50kg. This caviar is made by using an ancient Astrakhan recipe. It can take between 8 to 20 years to collect the medium-large 2 - 3mm grain size.
